Ingredients:

  • 4 (6-ounce) salmon fillets
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • Zest of 1 lemon
  • 2 cloves garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions:

  1. In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, dill, parsley, salt, and pepper.
  2. Place salmon fillets in the marinade, ensuring they are coated evenly. Cover and refrigerate for 20-30 minutes.
  3. Heat your grill to medium-high (about 375-400°F or 190-200°C).
  4. Remove salmon from marinade and allow excess marinade to drip off. Place fish skin-side down on the grill.
  5. Grill for 5-6 minutes, then carefully flip with the fish spatula.
  6. Grill for an additional 5-6 minutes, or until the internal temperature reaches 145°F (62°C).
  7. Remove from the grill and let rest for a few minutes before serving. Garnish with additional herbs or lemon wedges if desired.
