Ingredients:
- 4 (6-ounce) salmon fillets
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- Zest of 1 lemon
- 2 cloves garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- Salt to taste
- Freshly ground black pepper to taste
Instructions:
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, dill, parsley, salt, and pepper.
- Place salmon fillets in the marinade, ensuring they are coated evenly. Cover and refrigerate for 20-30 minutes.
- Heat your grill to medium-high (about 375-400°F or 190-200°C).
- Remove salmon from marinade and allow excess marinade to drip off. Place fish skin-side down on the grill.
- Grill for 5-6 minutes, then carefully flip with the fish spatula.
- Grill for an additional 5-6 minutes, or until the internal temperature reaches 145°F (62°C).
- Remove from the grill and let rest for a few minutes before serving. Garnish with additional herbs or lemon wedges if desired.
