Ingredients:

  • 150g daikon, peeled
  • 50g chopped shrimp
  • 45g chopped shiitake mushrooms
  • 35g chopped satsuma-age or kamaboko
  • 25g chopped green onions
  • 1 teaspoon dashi powder
  • 8g potato starch
  • 8g all-purpose flour
  • soy sauce, to taste
  • salt and pepper, to taste

Instructions:

  1. Grate the daikon into a mixing bowl, then drain the excess moisture, while retaining some for flavor.
  2. Chop the shrimp, shiitake mushrooms, satsuma-age or kamaboko, and green onions into small pieces.
  3. Combine grated daikon and chopped ingredients in the bowl.
  4. Mix in dashi powder, potato starch, flour, a splash of soy sauce, salt, and pepper until well blended.
  5. Heat a lightly greased frying pan over medium heat.
  6. Scoop mixture with a tablespoon, drop into pan, and flatten slightly.
  7. Fry both sides until golden brown and cooked through, about 4-5 minutes per side.
  8. Serve hot with additional soy sauce if desired.
