Ingredients:
- 150g daikon, peeled
- 50g chopped shrimp
- 45g chopped shiitake mushrooms
- 35g chopped satsuma-age or kamaboko
- 25g chopped green onions
- 1 teaspoon dashi powder
- 8g potato starch
- 8g all-purpose flour
- soy sauce, to taste
- salt and pepper, to taste
Instructions:
- Grate the daikon into a mixing bowl, then drain the excess moisture, while retaining some for flavor.
- Chop the shrimp, shiitake mushrooms, satsuma-age or kamaboko, and green onions into small pieces.
- Combine grated daikon and chopped ingredients in the bowl.
- Mix in dashi powder, potato starch, flour, a splash of soy sauce, salt, and pepper until well blended.
- Heat a lightly greased frying pan over medium heat.
- Scoop mixture with a tablespoon, drop into pan, and flatten slightly.
- Fry both sides until golden brown and cooked through, about 4-5 minutes per side.
- Serve hot with additional soy sauce if desired.
