Ingredients:

  • 4 whole crab clusters (approximately 2 lbs or 900g total weight)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2g)
  • 1 lemon, zested and juiced
  • ½ cup unsalted butter (113g)
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped (30g)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Fill a large pot with water, add salt, and bring to a boil. Add crab clusters; cook for 10-15 minutes until bright red and fully heated. Remove clusters and let them rest on a rack or plate to cool slightly.
  2. In a medium saucepan, melt the butter over medium heat. Add minced garlic; sauté until fragrant (about 2 minutes). Stir in parsley, lemon juice, and red pepper flakes if using. Remove from heat.
  3. Drizzle the garlic butter sauce over the warm crab clusters. Garnish with lemon zest and serve on a platter.
