Ingredients:
- 4 whole crab clusters (approximately 2 lbs or 900g total weight)
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2g)
- 1 lemon, zested and juiced
- ½ cup unsalted butter (113g)
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped (30g)
- Pinch of red pepper flakes (optional)
Instructions:
- Fill a large pot with water, add salt, and bring to a boil. Add crab clusters; cook for 10-15 minutes until bright red and fully heated. Remove clusters and let them rest on a rack or plate to cool slightly.
- In a medium saucepan, melt the butter over medium heat. Add minced garlic; sauté until fragrant (about 2 minutes). Stir in parsley, lemon juice, and red pepper flakes if using. Remove from heat.
- Drizzle the garlic butter sauce over the warm crab clusters. Garnish with lemon zest and serve on a platter.
