Ingredients:
- 1 lb large shrimp, peeled and deveined
- 8 oz smoked sausage, sliced into 1/4-inch pieces
- 1 lb fresh okra, sliced into 1/2-inch rounds
- 1 medium onion, chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1 can diced tomatoes, drained
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions:
- Peel and devein shrimp; set aside. Slice sausage, okra, onion, and bell pepper; mince garlic.
- Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned, about 5 minutes.
- Stir in onion, bell pepper, and garlic; sauté until softened, about 3-4 minutes.
- Add the sliced okra to the skillet and sauté for an additional 5 minutes.
- Sprinkle in smoked paprika, cayenne, salt, and pepper; mix well. Add shrimp and drained diced tomatoes; cook until shrimp are pink and cooked through, about 3-4 minutes.
- Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
