Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 8 oz smoked sausage, sliced into 1/4-inch pieces
  • 1 lb fresh okra, sliced into 1/2-inch rounds
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 can diced tomatoes, drained
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions:

  1. Peel and devein shrimp; set aside. Slice sausage, okra, onion, and bell pepper; mince garlic.
  2. Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned, about 5 minutes.
  3. Stir in onion, bell pepper, and garlic; sauté until softened, about 3-4 minutes.
  4. Add the sliced okra to the skillet and sauté for an additional 5 minutes.
  5. Sprinkle in smoked paprika, cayenne, salt, and pepper; mix well. Add shrimp and drained diced tomatoes; cook until shrimp are pink and cooked through, about 3-4 minutes.
  6. Taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
