Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Lay shrimp on paper towels and pat firmly on both sides until completely dry.
  2. In a bowl, toss the shrimp with salt, pepper, and Italian seasoning until evenly coated.
  3. Place a large stainless steel or cast-iron skillet over medium-high heat and add the olive oil. Wait until the oil shimmers and just begins to wisp smoke.
  4. Add shrimp in a single layer. Cook undisturbed for 2 minutes until the bottom is mahogany-colored.
  5. Flip the shrimp and immediately add the minced garlic. Sauté for another 1–2 minutes, stirring frequently to avoid burning the garlic.
  6. Pour in the lemon juice and remove the pan from the heat immediately to create a glossy sauce.
  7. Sprinkle with fresh parsley before plating.
