Ingredients:

  • 2 Large Salmon Steaks (8oz/225g each)
  • 1 tbsp Avocado oil
  • 0.5 tsp Fine sea salt
  • 0.25 tsp Cracked black pepper
  • 2 tbsp Unsalted butter
  • 3 cloves Garlic, smashed
  • 2 sprigs Fresh thyme
  • 0.5 Lemon, sliced

Instructions:

  1. Remove the salmon steaks from the refrigerator 15 minutes before cooking to bring them toward room temperature.
  2. Use paper towels to pat the fish extremely dry on all sides; moisture prevents a proper sear.
  3. Season the steaks generously with salt and pepper immediately before they hit the pan. Wait 5 minutes until you see tiny droplets of moisture appear, then pat dry one last time.
  4. Heat a heavy-bottomed skillet over medium-high heat with the avocado oil until shimmering and wisps of smoke appear.
  5. Carefully lay the salmon steaks away from you into the pan. Press down lightly with a spatula for 10 seconds to ensure surface contact. Sear undisturbed for 4 minutes.
  6. Flip the salmon steaks. Add the unsalted butter, smashed garlic, herbs, and lemon slices to the pan.
  7. Tilt the skillet and use a small spoon to baste the foaming, aromatic butter over the fish for the final 2-3 minutes of cooking until the center reaches your desired doneness.
