Ingredients:
- 2 tbsp Unsalted butter
- 3 cloves Garlic, minced
- 1 small Shallot, finely minced
- 1 tbsp Fresh lemon juice
- 1 tsp Lemon zest
- 1/2 cup Heavy cream
- 1 tsp Dijon mustard
- 1/4 tsp Sea salt
- 1/8 tsp Black pepper
- 1 tbsp Fresh dill or parsley
- 1 tbsp Cold butter, cubed
- 1 tsp Capers
Instructions:
- Place 2 tbsp unsalted butter in a small saucepan over medium heat until it begins to foam and sizzle.
- Add the minced shallot and garlic, keeping them moving so they soften without browning too much.
- Cook for about 2 minutes until the aroma is sweet and the shallots are translucent.
- Pour in 1/2 cup heavy cream and 1 tsp Dijon mustard, whisking constantly.
- Let the mixture come to a gentle simmer for 2 to 3 minutes until it thickens enough to coat a spoon.
- Stir in 1 tbsp lemon juice and 1 tsp zest, doing this slowly to let the cream adjust to the pH change.
- Fold in 1 tsp capers and the 1 tbsp fresh dill or parsley.
- Add the sea salt and freshly cracked pepper, tasting as you go.
- Turn off the heat and whisk in the 1 tbsp cold cubed butter until the sauce looks glossy and shimmering.
- Let the sauce sit for 1 minute before pouring over your Crispy Skin Salmon recipe.
