Ingredients:

  • 1 lb (450g) fresh tilapia fillet, skinless and boneless
  • 1 cup (240ml) fresh lime juice (about 6-8 limes)
  • 1 small red onion, finely chopped
  • 1 medium tomato, diced
  • 1 small cucumber, diced
  • 1-2 jalapeños, seeds removed and finely chopped
  • 1/3 cup (10g) fresh cilantro, chopped
  • Salt and pepper, to taste
  • Optional: 1 avocado, diced (for serving)

Instructions:

  1. Dice the tilapia into small, bite-sized pieces (about 1/2-inch).
  2. Place the diced tilapia in a mixing bowl and pour the lime juice over it. Ensure the fish is fully submerged in the juice. Cover with plastic wrap.
  3. Refrigerate for 30 minutes, or until the fish appears opaque and 'cooked.'
  4. In a separate bowl, combine the chopped red onion, tomato, cucumber, and jalapeños. Season with salt and pepper to taste.
  5. After the marination, drain excess lime juice from the fish and mix it with the vegetable mixture. Gently fold in chopped cilantro.
  6. Divide into serving bowls, and top with diced avocado if desired.
