Ingredients:
- 1 lb (450g) fresh tilapia fillet, skinless and boneless
- 1 cup (240ml) fresh lime juice (about 6-8 limes)
- 1 small red onion, finely chopped
- 1 medium tomato, diced
- 1 small cucumber, diced
- 1-2 jalapeños, seeds removed and finely chopped
- 1/3 cup (10g) fresh cilantro, chopped
- Salt and pepper, to taste
- Optional: 1 avocado, diced (for serving)
Instructions:
- Dice the tilapia into small, bite-sized pieces (about 1/2-inch).
- Place the diced tilapia in a mixing bowl and pour the lime juice over it. Ensure the fish is fully submerged in the juice. Cover with plastic wrap.
- Refrigerate for 30 minutes, or until the fish appears opaque and 'cooked.'
- In a separate bowl, combine the chopped red onion, tomato, cucumber, and jalapeños. Season with salt and pepper to taste.
- After the marination, drain excess lime juice from the fish and mix it with the vegetable mixture. Gently fold in chopped cilantro.
- Divide into serving bowls, and top with diced avocado if desired.
