Ingredients:

  • 4 oz sea grapes, rinsed
  • 1 medium cucumber, thinly sliced
  • 1 small red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup finely chopped red onion
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or agave syrup
  • Salt and pepper to taste

Instructions:

  1. Rinse and slice the cucumber, dice the red bell pepper, halve the cherry tomatoes, and finely chop the red onion.
  2. In a mixing bowl, combine the orange juice, olive oil, rice vinegar, and honey. Whisk until well combined and emulsified. Season with salt and pepper to taste.
  3. In a large bowl, combine the prepared vegetables and sea grapes. Drizzle the citrus vinaigrette over the salad and toss gently to coat all ingredients.
  4. Transfer the salad to a serving platter and garnish with additional sea grapes if desired.
