Ingredients:
- 4 oz sea grapes, rinsed
- 1 medium cucumber, thinly sliced
- 1 small red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup finely chopped red onion
- 1/4 cup freshly squeezed orange juice
- 2 tablespoons olive oil
- 1 tablespoon rice vinegar
- 1 teaspoon honey or agave syrup
- Salt and pepper to taste
Instructions:
- Rinse and slice the cucumber, dice the red bell pepper, halve the cherry tomatoes, and finely chop the red onion.
- In a mixing bowl, combine the orange juice, olive oil, rice vinegar, and honey. Whisk until well combined and emulsified. Season with salt and pepper to taste.
- In a large bowl, combine the prepared vegetables and sea grapes. Drizzle the citrus vinaigrette over the salad and toss gently to coat all ingredients.
- Transfer the salad to a serving platter and garnish with additional sea grapes if desired.
