Ingredients:

  • 2 large red bell peppers, cut into 1-inch chunks
  • 1 medium red onion, cut into 1-inch chunks
  • 1 tbsp olive oil
  • 1/3 cup extra virgin olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Cut the red bell peppers and red onion into uniform 1-inch squares to match the size of the shrimp.
  2. In a large bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, pepper, and red pepper flakes.
  3. Toss the shrimp and vegetables into the marinade, coating thoroughly. Let the mixture sit for 30 minutes at room temperature.
  4. Slide the ingredients onto skewers, alternating between a shrimp, a piece of red pepper, and a piece of red onion, leaving small gaps between items.
  5. Preheat the grill to medium-high heat and lightly oil the grates using 1 tablespoon of olive oil.
  6. Grill the skewers over high heat, flipping once, until the shrimp are opaque and curled and the vegetables are tender and charred.
