- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Cut the red bell peppers and red onion into uniform 1-inch squares to match the size of the shrimp.
- In a large bowl, whisk together the extra virgin olive oil, lemon juice, minced garlic, smoked paprika, oregano, salt, pepper, and red pepper flakes.
- Toss the shrimp and vegetables into the marinade, coating thoroughly. Let the mixture sit for 30 minutes at room temperature.
- Slide the ingredients onto skewers, alternating between a shrimp, a piece of red pepper, and a piece of red onion, leaving small gaps between items.
- Preheat the grill to medium-high heat and lightly oil the grates using 1 tablespoon of olive oil.
- Grill the skewers over high heat, flipping once, until the shrimp are opaque and curled and the vegetables are tender and charred.
