Ingredients:
- 1 pound of fresh sea beans (also known as samphire or salicornia)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Zest of 1 lemon
- Juice of 1 lemon (about 2 tablespoons)
- Salt, to taste
- Freshly ground black pepper, to taste
- Optional garnish: Chopped fresh parsley or dill for serving
Instructions:
- - Rinse the sea beans under cold water to remove any sand or grit. Trim off any tough ends if necessary.
- - In a large skillet over medium heat, add the olive oil. Allow it to heat until shimmering but not smoking.
- - Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Be careful not to let it burn.
- - Add the rinsed sea beans to the skillet and stir well. Cook for about5–7 minutes, stirring occasionally until they are tender but still crisp.
- - Once cooked, sprinkle in lemon zest, squeeze in lemon juice, and season with salt and freshly ground black pepper. Toss everything together gently to combine all flavors.
- - Transfer sautéed sea beans to a serving dish. Garnish with chopped parsley or dill if desired.
