Ingredients:

  • 1 pound of fresh sea beans (also known as samphire or salicornia)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon (about 2 tablespoons)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional garnish: Chopped fresh parsley or dill for serving

Instructions:

  1. - Rinse the sea beans under cold water to remove any sand or grit. Trim off any tough ends if necessary.
  2. - In a large skillet over medium heat, add the olive oil. Allow it to heat until shimmering but not smoking.
  3. - Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant. Be careful not to let it burn.
  4. - Add the rinsed sea beans to the skillet and stir well. Cook for about5–7 minutes, stirring occasionally until they are tender but still crisp.
  5. - Once cooked, sprinkle in lemon zest, squeeze in lemon juice, and season with salt and freshly ground black pepper. Toss everything together gently to combine all flavors.
  6. - Transfer sautéed sea beans to a serving dish. Garnish with chopped parsley or dill if desired.
