Ingredients:
- 2 sea trout fillets (about 6 ounces each)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter, softened
- Zest of 1 lemon
- Juice of half a lemon
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon fresh dill, chopped (optional)
- Pinch of salt
Instructions:
- <strong>Step 1: Prepare the Lemon Herb Butter</strong><br>In a small bowl, combine the softened butter, lemon zest, lemon juice, parsley, dill (if using), and a pinch of salt. Mix well until all ingredients are fully incorporated. Set aside.
- <strong>Step 2: Season the Fish</strong><br>Pat the sea trout fillets dry with paper towels. Season both sides generously with salt and pepper.
- <strong>Step3: Cook the Sea Trout</strong><br>Heat olive oil in a large skillet over medium-high heat. Once hot, place the sea trout fillets skin-side down in the skillet. Cook for about <b>4–5 minutes</b>, or until the skin is crispy and golden brown. Carefully flip the fish and cook for an additional <b>3–4 minutes</b>, or until it flakes easily with a fork.
- <strong>Step4: Serve</strong><br>Transfer cooked fish to plates. Top each fillet with a generous dollop of lemon herb butter while still warm so that it melts into sauce.
