Ingredients:

  • 1 large russet potato (about 300g / 10.5 oz)
  • 1 teaspoon olive oil (optional)
  • ½ teaspoon salt (to taste)
  • Butter (2 tablespoons / 30g, optional)
  • Shredded cheese (¼ cup / 30g, optional)
  • Sour cream (2 tablespoons / 30g, optional)
  • 1 tablespoon chives (5g, chopped, optional)

Instructions:

  1. Wash the potato thoroughly under running water.
  2. Use a fork or knife to poke several holes in the potato (4-6 times).
  3. If desired, rub the potato with olive oil and sprinkle with salt.
  4. Place the potato on a microwave-safe plate and cook on high for 5 minutes.
  5. Flip the potato and continue cooking for an additional 3-5 minutes until tender.
  6. Allow the potato to rest for 2 minutes before handling.
  7. Slice open the top and fluff the insides with a fork.
  8. Add desired toppings and serve warm.
