Ingredients:

  • 4 medium Russet or Maris Piper Potatoes (Scrubbed very well)
  • 2 Tbsp Olive Oil or Avocado Oil
  • 1 tsp Coarse Sea Salt (e.g., Maldon)
  • 1/2 tsp Black Pepper (Freshly ground)

Instructions:

  1. Preheat the air fryer to 400°F (200°C).
  2. Thoroughly scrub the potatoes under cold water. Crucially, dry the skins completely with a clean cloth or paper towel.
  3. Using a fork or skewer, pierce each potato deeply 6–8 times all over to allow steam to escape.
  4. In a small bowl, toss the potatoes with the oil until lightly coated. Sprinkle generously with coarse sea salt and black pepper, rubbing it into the skin.
  5. Place the seasoned potatoes directly into the air fryer basket in a single layer. Do not overcrowd.
  6. Air fry at 400°F (200°C) for 25 minutes.
  7. Using tongs, carefully flip the potatoes.
  8. Continue air frying for another 5–15 minutes until the skin is visibly crisp and a skewer slides easily into the centre with no resistance.
  9. Remove potatoes and let them sit on a cutting board for 2 minutes.
  10. Slice the top lengthwise, press the sides inwards to open the potato, fluff the insides with a fork, and serve immediately with your chosen toppings.
