Ingredients:

  • 1 cup (106g) Kodiak Cakes Power Cakes Mix
  • 1 large (120g) ripe banana, mashed
  • 1 large egg
  • 1/2 cup (120ml) milk of choice
  • 1/2 tsp (1g) ground cinnamon
  • 1 tsp (5ml) neutral oil or butter for greasing

Instructions:

  1. In a large mixing bowl, peel the banana and mash it with a fork until it reaches a smooth, liquid-like consistency. Whisk in the egg and your choice of milk until the mixture is fully emulsified.
  2. Add the Kodiak Cakes mix and cinnamon to the wet ingredients. Whisk gently until just combined (small lumps are fine). Let the batter rest for 2–3 minutes to activate the leavening agents.
  3. Heat a non-stick skillet over medium-low heat and lightly grease with oil or butter. Pour 1/4 cup of batter per pancake. Cook for 2–3 minutes until bubbles form on the surface and edges look matte.
  4. Flip the pancakes carefully and cook the other side for another 1–2 minutes until golden brown and the center springs back when touched.
