Ingredients:
- 1 pound (450g) fresh asparagus, trimmed
- 2 tablespoons (30ml) olive oil
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Juice of 1 lemon
- Zest of 1 lemon
- Grated Parmesan cheese (about ¼ cup or 25g)
Instructions:
- Rinse and trim the asparagus to remove tough ends.
- Heat olive oil in a large frying pan over medium heat.
- Add the asparagus in a single layer; avoid overcrowding. Cook in batches if necessary.
- Sauté the asparagus for 3-4 minutes until it starts to turn bright green and softens slightly.
- Add minced garlic and continue to cook for another 2-3 minutes until fragrant.
- Season with salt and pepper; toss to combine.
- Remove from heat and drizzle with lemon juice; toss lightly to coat.
- Serve hot, garnished with lemon zest and Parmesan cheese if desired.
