Ingredients:

  • 1 pound (450g) fresh asparagus, trimmed
  • 2 tablespoons (30ml) olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Juice of 1 lemon
  • Zest of 1 lemon
  • Grated Parmesan cheese (about ¼ cup or 25g)

Instructions:

  1. Rinse and trim the asparagus to remove tough ends.
  2. Heat olive oil in a large frying pan over medium heat.
  3. Add the asparagus in a single layer; avoid overcrowding. Cook in batches if necessary.
  4. Sauté the asparagus for 3-4 minutes until it starts to turn bright green and softens slightly.
  5. Add minced garlic and continue to cook for another 2-3 minutes until fragrant.
  6. Season with salt and pepper; toss to combine.
  7. Remove from heat and drizzle with lemon juice; toss lightly to coat.
  8. Serve hot, garnished with lemon zest and Parmesan cheese if desired.
