Ingredients:
- 4 large Russet potatoes (approximately 8-10 oz each), scrubbed clean
- 2 tablespoons olive oil
- 1 teaspoon kosher salt, plus more to taste
- ½ teaspoon black pepper, plus more to taste
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and dry potatoes. Pierce each potato several times with a fork or knife.
- Drizzle potatoes with olive oil and rub to coat evenly. Sprinkle generously with salt and pepper.
- Place potatoes directly on the baking sheet. Bake for 60-75 minutes, or until a fork easily pierces the center.
- Carefully remove the potatoes from the oven. Slice open, fluff the insides with a fork, and serve with your favorite toppings.
