Ingredients:

  • 4 large Russet potatoes (approximately 8-10 oz each), scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon black pepper, plus more to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry potatoes. Pierce each potato several times with a fork or knife.
  3. Drizzle potatoes with olive oil and rub to coat evenly. Sprinkle generously with salt and pepper.
  4. Place potatoes directly on the baking sheet. Bake for 60-75 minutes, or until a fork easily pierces the center.
  5. Carefully remove the potatoes from the oven. Slice open, fluff the insides with a fork, and serve with your favorite toppings.
