Ingredients:

  • 4 medium sweet potatoes (about 8-10 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter (optional)
  • 2 tablespoons brown sugar (optional)
  • ½ teaspoon cinnamon (optional)
  • Pinch of nutmeg (optional)
  • Toasted pecans or walnuts, chopped (optional)
  • Mini marshmallows (optional)
  • Maple syrup (optional)
  • Cooked bacon crumbles (from 4-6 slices) (optional)
  • Shredded cheddar cheese (about ½ cup) (optional)
  • Sour cream or Greek yogurt (optional)
  • Chopped green onions or chives (optional)
  • Black beans (drained and rinsed) (optional)
  • Salsa (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the sweet potatoes. Prick each potato several times with a fork.
  3. Rub the sweet potatoes with olive oil, salt, and pepper. Ensure they're evenly coated.
  4. Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until fork-tender.
  5. Check for doneness by squeezing the potato gently (using oven mitts!). It should give easily. You can also use an instant-read thermometer; the internal temperature should be around 205-210°F (96-99°C).
  6. While the potatoes are baking, prepare your desired toppings.
  7. Remove the potatoes from the oven. Cut them open lengthwise and fluff the insides with a fork. Add your chosen toppings and serve immediately.
