Ingredients:
- 4 medium sweet potatoes (about 8-10 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 tablespoons butter (optional)
- 2 tablespoons brown sugar (optional)
- ½ teaspoon cinnamon (optional)
- Pinch of nutmeg (optional)
- Toasted pecans or walnuts, chopped (optional)
- Mini marshmallows (optional)
- Maple syrup (optional)
- Cooked bacon crumbles (from 4-6 slices) (optional)
- Shredded cheddar cheese (about ½ cup) (optional)
- Sour cream or Greek yogurt (optional)
- Chopped green onions or chives (optional)
- Black beans (drained and rinsed) (optional)
- Salsa (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Wash and dry the sweet potatoes. Prick each potato several times with a fork.
- Rub the sweet potatoes with olive oil, salt, and pepper. Ensure they're evenly coated.
- Place the sweet potatoes on a baking sheet and bake for 45-60 minutes, or until fork-tender.
- Check for doneness by squeezing the potato gently (using oven mitts!). It should give easily. You can also use an instant-read thermometer; the internal temperature should be around 205-210°F (96-99°C).
- While the potatoes are baking, prepare your desired toppings.
- Remove the potatoes from the oven. Cut them open lengthwise and fluff the insides with a fork. Add your chosen toppings and serve immediately.
