Ingredients:
- 4 medium sweet potatoes, about 8-10 ounces (225-285g) each, scrubbed clean
- 2 tablespoons olive oil (30ml)
- 1 teaspoon kosher salt (5g)
- ½ teaspoon black pepper (2.5g)
Instructions:
- Preheat your oven to 400°F (200°C/Gas Mark 6).
- Wash and dry sweet potatoes. Poke each sweet potato several times with a fork.
- Place the sweet potatoes on a baking sheet. Drizzle with olive oil and rub all over to coat. Sprinkle with salt and pepper, ensuring they are evenly distributed.
- Bake for 45-75 minutes, or until the sweet potatoes are easily pierced with a fork and the skin is slightly wrinkled. Cooking time will depend on the size of the potatoes.
- For extra crispy skin, increase the oven temperature to 450°F (230°C/Gas Mark 8) during the last 10 minutes of baking.
- Remove from the oven and let cool slightly before serving.
