Ingredients:
- 2 medium sweet potatoes (about 6-8 ounces/170-225g each), scrubbed clean
- 1 tablespoon olive oil (15 ml)
- ½ teaspoon kosher salt (2.5 ml)
- ¼ teaspoon black pepper (1.25 ml)
- Optional: a pinch of your favourite spice like cinnamon, smoked paprika or chili powder
Instructions:
- Wash and thoroughly dry the sweet potatoes.
- Prick each sweet potato several times with a fork (to allow steam to escape).
- In a small bowl, whisk together olive oil, salt, pepper, and any optional spices.
- Brush the sweet potatoes all over with the olive oil mixture (or spray to coat).
- Place the sweet potatoes in the air fryer basket in a single layer, making sure they aren't overcrowded.
- Air fry at 400°F (200°C) for 30-40 minutes, flipping halfway through.
- Insert a fork or knife into the center of a sweet potato. It should slide in easily with little resistance.
- Carefully remove the sweet potatoes from the air fryer.
- Serve immediately with your favorite toppings.
