Ingredients:

  • 2 medium sweet potatoes (about 6-8 ounces/170-225g each), scrubbed clean
  • 1 tablespoon olive oil (15 ml)
  • ½ teaspoon kosher salt (2.5 ml)
  • ¼ teaspoon black pepper (1.25 ml)
  • Optional: a pinch of your favourite spice like cinnamon, smoked paprika or chili powder

Instructions:

  1. Wash and thoroughly dry the sweet potatoes.
  2. Prick each sweet potato several times with a fork (to allow steam to escape).
  3. In a small bowl, whisk together olive oil, salt, pepper, and any optional spices.
  4. Brush the sweet potatoes all over with the olive oil mixture (or spray to coat).
  5. Place the sweet potatoes in the air fryer basket in a single layer, making sure they aren't overcrowded.
  6. Air fry at 400°F (200°C) for 30-40 minutes, flipping halfway through.
  7. Insert a fork or knife into the center of a sweet potato. It should slide in easily with little resistance.
  8. Carefully remove the sweet potatoes from the air fryer.
  9. Serve immediately with your favorite toppings.
