Ingredients:

  • 2 cans (5 oz / 142g each) tuna, drained well
  • 1/4 cup (60ml) mayonnaise
  • 1 large egg, beaten
  • 1 tbsp (15ml) fresh lemon juice
  • 2 tbsp (15g) green onions, finely minced
  • 1 tsp (3g) garlic powder
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/2 cup (30g) Panko breadcrumbs
  • 1/2 cup (50g) grated Parmesan cheese
  • 1 tbsp (15ml) olive oil

Instructions:

  1. In a medium mixing bowl, combine the drained tuna, mayonnaise, beaten egg, and lemon juice. Stir in the minced green onions, garlic powder, salt, and pepper until a thick, cohesive paste forms.
  2. Combine the Panko breadcrumbs and grated Parmesan in a shallow dish.
  3. Scoop about 1/3 cup of the tuna mixture and shape it into a uniform disc approximately 1 inch thick. Press each side of the patty firmly into the Parmesan mixture until evenly coated.
  4. Heat olive oil in a skillet over medium heat. Place the patties in the pan and sear for 3–5 minutes per side, pressing down lightly with a spatula, until the edges are mahogany-colored and the crust is crisp.
