Ingredients:
- 4 (6-8 ounce) cod fillets, skinless and boneless
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 lemon, zested and juiced (about 2 tablespoons juice)
- 1/2 cup grated Parmesan cheese, finely grated
- 1/4 cup panko breadcrumbs
- 2 tablespoons unsalted butter, melted
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
- 1 clove garlic, minced
Instructions:
- Preheat oven to 400°F (200°C). Pat cod fillets dry with paper towels. Place in a greased baking dish.
- Drizzle with olive oil, salt, pepper, lemon zest, and lemon juice.
- In a small bowl, combine Parmesan cheese, panko breadcrumbs, melted butter, parsley, chives, and garlic. Mix well.
- Evenly spread the Parmesan crust mixture over each cod fillet.
- Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork, and the crust is golden brown. Check the internal temperature of the fish. It needs to reach 145°F (63°C).
- Serve immediately.
