Ingredients:

  • 1.5 lbs fresh cod fillets, cut into 4 equal portions
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, finely grated
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried oregano
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 1/2 tsp smoked paprika
  • 1 tbsp fresh Italian parsley, finely minced

Instructions:

  1. Pat the cod fillets bone-dry with paper towels. Season both sides with salt and let sit for 10 minutes to draw out moisture. Preheat your oven to 400°F (200°C).
  2. After 10 minutes, pat the fillets dry again to remove beads of water. Place on a rimmed baking sheet and season with black pepper.
  3. In a small glass bowl, whisk the melted butter, grated garlic, lemon juice, zest, and oregano until slightly thickened. Brush this emulsion generously over the top and sides of each fillet.
  4. In a separate bowl, toss together the panko breadcrumbs, grated parmesan, and smoked paprika. Press this mixture firmly onto the top of the buttered fillets.
  5. Bake in the preheated oven for 10-12 minutes, or until the internal temperature reaches 145°F and the fish flakes easily with a fork. Garnish with fresh parsley before serving.
