Ingredients:
- 1.5 lbs fresh cod fillets, cut into 4 equal portions
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, finely grated
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1/2 tsp dried oregano
- 1/4 cup freshly grated Parmesan cheese
- 1/4 cup panko breadcrumbs
- 1/2 tsp smoked paprika
- 1 tbsp fresh Italian parsley, finely minced
Instructions:
- Pat the cod fillets bone-dry with paper towels. Season both sides with salt and let sit for 10 minutes to draw out moisture. Preheat your oven to 400°F (200°C).
- After 10 minutes, pat the fillets dry again to remove beads of water. Place on a rimmed baking sheet and season with black pepper.
- In a small glass bowl, whisk the melted butter, grated garlic, lemon juice, zest, and oregano until slightly thickened. Brush this emulsion generously over the top and sides of each fillet.
- In a separate bowl, toss together the panko breadcrumbs, grated parmesan, and smoked paprika. Press this mixture firmly onto the top of the buttered fillets.
- Bake in the preheated oven for 10-12 minutes, or until the internal temperature reaches 145°F and the fish flakes easily with a fork. Garnish with fresh parsley before serving.
