  • 2 cans (5 oz each) Solid White Albacore in water, drained thoroughly
  • 1/4 cup Red onion, very finely minced
  • 2 tbsp Sweet pickle relish
  • 1/3 cup High-quality Mayonnaise
  • 1 tbsp Freshly squeezed lemon juice
  • 1 tsp Dijon mustard
  • 1/4 tsp Kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 4 slices Honey Wheat Bread
  • 1/2 cup Emerald greens or Bibb lettuce
  • 4 thin slices Vine-ripened tomato

Instructions:

  1. Drain the albacore tuna in a fine-mesh strainer, pressing down firmly with a fork until no liquid remains to prevent a soggy sandwich.
  2. Transfer the dry tuna flakes to a mixing bowl and break them apart gently into bite-sized chunks using a fork or silicone spatula.
  3. In a separate small bowl or directly with the tuna, combine the mayonnaise, lemon juice, Dijon mustard, salt, and pepper.
  4. Fold in the finely minced red onion and sweet pickle relish until the tuna is evenly coated but still retains its flaked texture.
  5. Assemble the sandwiches by placing a portion of the tuna mixture onto two slices of honey wheat bread. Top with tomato slices, emerald greens, and the remaining bread slices.
