Ingredients:
- 4 Large Tilapia Fillets (approx. 6 oz / 170g each), patted dry
- 2 tbsp (30ml) Avocado oil
- 1 tbsp (14g) Unsalted butter
- 1/2 tsp (3g) Sea salt
- 1/2 tsp (1g) Black pepper, freshly cracked
- 2 tbsp (28g) Everything Bagel Seasoning
- 3/4 cup (180ml) Heavy whipping cream
- 1 tbsp (15ml) Fresh lemon juice
- 1 tsp (5g) Dijon mustard
- 1 tbsp (4g) Fresh chives, finely chopped
Instructions:
- Remove the tilapia from packaging and pat both sides aggressively with paper towels to ensure a dry surface. Season both sides lightly with sea salt and black pepper.
- Heat avocado oil in a 12-inch heavy-bottomed skillet over medium-high heat until shimmering. Lay fillets into the pan, pressing lightly with a spatula for 5 seconds.
- Cook undisturbed for 3 minutes until edges are mahogany-colored. Flip once, add butter to the pan, and cook for another 2 minutes. Remove fish to a warm plate.
- Reduce heat to medium. Pour heavy cream into the skillet, whisking to deglaze the browned bits. Add Dijon mustard and Everything Bagel Seasoning.
- Simmer the sauce for 2 minutes until it thickens enough to coat the back of a spoon. Stir in lemon juice and garnish with fresh chives before serving over the fish.
