Ingredients:

  • 4 Large Tilapia Fillets (approx. 6 oz / 170g each), patted dry
  • 2 tbsp (30ml) Avocado oil
  • 1 tbsp (14g) Unsalted butter
  • 1/2 tsp (3g) Sea salt
  • 1/2 tsp (1g) Black pepper, freshly cracked
  • 2 tbsp (28g) Everything Bagel Seasoning
  • 3/4 cup (180ml) Heavy whipping cream
  • 1 tbsp (15ml) Fresh lemon juice
  • 1 tsp (5g) Dijon mustard
  • 1 tbsp (4g) Fresh chives, finely chopped

Instructions:

  1. Remove the tilapia from packaging and pat both sides aggressively with paper towels to ensure a dry surface. Season both sides lightly with sea salt and black pepper.
  2. Heat avocado oil in a 12-inch heavy-bottomed skillet over medium-high heat until shimmering. Lay fillets into the pan, pressing lightly with a spatula for 5 seconds.
  3. Cook undisturbed for 3 minutes until edges are mahogany-colored. Flip once, add butter to the pan, and cook for another 2 minutes. Remove fish to a warm plate.
  4. Reduce heat to medium. Pour heavy cream into the skillet, whisking to deglaze the browned bits. Add Dijon mustard and Everything Bagel Seasoning.
  5. Simmer the sauce for 2 minutes until it thickens enough to coat the back of a spoon. Stir in lemon juice and garnish with fresh chives before serving over the fish.
