Ingredients:

  • 4 (6-ounce) flounder fillets (170 grams each)
  • 4 (6-ounce) halibut fillets (170 grams each)
  • 2 tablespoons olive oil (30 mL)
  • Salt and pepper to taste
  • 1 cup mixed citrus segments (orange, grapefruit, lime) (240 mL)
  • 1 tablespoon honey (15 mL)
  • 1 tablespoon fresh cilantro, chopped (15 g)
  • Zest of 1 lime
  • Juice of 1 lime (30 mL)

Instructions:

  1. Prepare the Citrus Relish: Segments and chop mixed citrus. In a bowl, combine citrus, honey, cilantro, lime zest, and lime juice. Mix well.
  2. Season the Fish: Pat both fish fillets dry with paper towels. Rub with olive oil, and season with salt and pepper.
  3. Heat the Skillet: Place the skillet over medium heat and let it heat until shimmering.
  4. Sear the Fish: Place flounder fillets skin-side down and cook for 3-4 minutes until golden brown. Flip and cook for another 2-3 minutes or until the fish flakes easily with a fork. Repeat with halibut fillets, adjusting cooking time as needed.
  5. Garnish and Serve: Top each fish fillet with a generous spoonful of citrus relish. Serve immediately with extra citrus slices on the side.
