Ingredients:

  • 4 fillets Alaskan cod (6 ounces/170 g each)
  • 2 tablespoons olive oil (30 ml)
  • Salt and pepper to taste
  • 1/2 cup unsalted butter (113 g), cut into cubes
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice (30 ml)
  • 2 tablespoons fresh dill, chopped (30 g)
  • 1 clove garlic, minced
  • Salt to taste

Instructions:

  1. Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
  2. Place the skillet over medium-high heat and add olive oil, heating until shimmering.
  3. Place the cod fillets skin-side down in the skillet. Sear for 3-4 minutes until golden brown, then flip and cook for an additional 3-4 minutes until cooked through.
  4. While the cod cooks, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook until fragrant.
  5. Stir in the lemon zest, lemon juice, dill, and salt. Remove from heat.
  6. Plate the cod fillets and drizzle the lemon-dill butter sauce over the top. Garnish with additional dill and lemon slices if desired.
