Ingredients:
- 4 fillets Alaskan cod (6 ounces/170 g each)
- 2 tablespoons olive oil (30 ml)
- Salt and pepper to taste
- 1/2 cup unsalted butter (113 g), cut into cubes
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice (30 ml)
- 2 tablespoons fresh dill, chopped (30 g)
- 1 clove garlic, minced
- Salt to taste
Instructions:
- Pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- Place the skillet over medium-high heat and add olive oil, heating until shimmering.
- Place the cod fillets skin-side down in the skillet. Sear for 3-4 minutes until golden brown, then flip and cook for an additional 3-4 minutes until cooked through.
- While the cod cooks, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook until fragrant.
- Stir in the lemon zest, lemon juice, dill, and salt. Remove from heat.
- Plate the cod fillets and drizzle the lemon-dill butter sauce over the top. Garnish with additional dill and lemon slices if desired.
