Ingredients:

  • 1 lb Pintado (Spotted Sorubim) fillets
  • 1 lb Tilapia fillets
  • 1 tbsp Olive Oil
  • 1/4 cup Fresh Lime Juice
  • 1/4 cup Fresh Orange Juice
  • 3 cloves Garlic, minced
  • 1 small Red Onion, finely chopped
  • 2 tbsp Fresh Cilantro, chopped
  • 1 tbsp Fresh Parsley, chopped
  • 1 tsp Smoked Paprika
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Red Pepper Flakes (optional)
  • Salt and Black Pepper to taste

Instructions:

  1. In a small bowl, whisk together lime juice, orange juice, minced garlic, chopped red onion, cilantro, parsley, smoked paprika, oregano, red pepper flakes (if using), salt, and pepper.
  2. Place the Pintado and Tilapia fillets in the baking dish. Pour the marinade over the fish, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Drizzle olive oil over the fish. Bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  5. Let the fish rest for a few minutes before serving. Garnish with extra cilantro or parsley if desired.
