Ingredients:
- 1 lb Pintado (Spotted Sorubim) fillets
- 1 lb Tilapia fillets
- 1 tbsp Olive Oil
- 1/4 cup Fresh Lime Juice
- 1/4 cup Fresh Orange Juice
- 3 cloves Garlic, minced
- 1 small Red Onion, finely chopped
- 2 tbsp Fresh Cilantro, chopped
- 1 tbsp Fresh Parsley, chopped
- 1 tsp Smoked Paprika
- 1/2 tsp Dried Oregano
- 1/4 tsp Red Pepper Flakes (optional)
- Salt and Black Pepper to taste
Instructions:
- In a small bowl, whisk together lime juice, orange juice, minced garlic, chopped red onion, cilantro, parsley, smoked paprika, oregano, red pepper flakes (if using), salt, and pepper.
- Place the Pintado and Tilapia fillets in the baking dish. Pour the marinade over the fish, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.
- Preheat oven to 400°F (200°C).
- Drizzle olive oil over the fish. Bake for 20-25 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Let the fish rest for a few minutes before serving. Garnish with extra cilantro or parsley if desired.
