Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into strips
  • 1/2 cup (120ml) buttermilk (or milk with 1 tbsp lemon juice/vinegar)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 cup (120g) panko breadcrumbs
  • 1/2 cup (60g) grated Parmesan cheese (optional)
  • 1/4 cup (30g) all-purpose flour
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 cup (60ml) olive oil, plus more for greasing

Instructions:

  1. Cut chicken breasts into strips. Tenderize lightly (optional). Marinate in buttermilk, salt, and pepper for at least 15 minutes.
  2. In a shallow dish, combine panko, Parmesan (if using), flour, Italian seasoning, garlic powder, paprika, and cayenne (if using). In a second dish, pour oil.
  3. Dip each chicken strip in oil, letting excess drip off. Dredge in the breadcrumb mixture, pressing firmly. Place on a greased/parchment-lined baking sheet.
  4. Preheat oven to 400°F (200°C). Bake for 20-25 minutes, or until chicken is cooked through (165°F/74°C) and breading is golden brown.
  5. Let the baked chicken strips rest for a few minutes before serving.
