Ingredients:
- 1.5 lbs firm white fish fillets (Cod, Halibut, or Mahi Mahi)
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp fresh oregano, finely chopped
- 1 tsp dried thyme
- 1 tsp sea salt
- 1/2 tsp freshly cracked black pepper
Instructions:
- In a stainless steel mixing bowl, whisk together the olive oil, lemon juice, minced garlic, and all chopped herbs. Let the mixture sit for 5 minutes to allow the fat-soluble flavors of the oregano and thyme to bloom.
- Pat the fish fillets completely dry with paper towels to ensure a mahogany-colored crust.
- Brush the marinade generously over all sides of the fish and let the fillets marinate for 15 minutes at room temperature.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Place the fillets on the heat and press down gently for 2 seconds to establish a sear.
