Ingredients:

  • 1.5 lbs firm white fish fillets (Cod, Halibut, or Mahi Mahi)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp fresh oregano, finely chopped
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1/2 tsp freshly cracked black pepper

Instructions:

  1. In a stainless steel mixing bowl, whisk together the olive oil, lemon juice, minced garlic, and all chopped herbs. Let the mixture sit for 5 minutes to allow the fat-soluble flavors of the oregano and thyme to bloom.
  2. Pat the fish fillets completely dry with paper towels to ensure a mahogany-colored crust.
  3. Brush the marinade generously over all sides of the fish and let the fillets marinate for 15 minutes at room temperature.
  4. Preheat your grill to medium-high heat and lightly oil the grates.
  5. Place the fillets on the heat and press down gently for 2 seconds to establish a sear.
