Ingredients:

  • 1 lb (450g) medium shrimp, peeled and deveined
  • 1 tbsp (8g) Old Bay Seasoning
  • 1/2 cup (120ml) mayonnaise
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tsp (5ml) Dijon mustard
  • 1/2 tsp (2.5ml) Worcestershire sauce
  • 2 ribs (60g) celery, finely diced
  • 3 scallions (30g), thinly sliced
  • 2 tbsp (8g) fresh dill, chopped
  • 1/4 tsp (1g) black pepper

Instructions:

  1. If using raw shrimp, bring a pot of water to a simmer and add 1/2 tbsp (4g) of Old Bay. Poach the shrimp for 2–3 minutes until they turn an opaque pink. Immediately plunge them into an ice bath to stop the cooking. Once cold, pat them completely dry with paper towels and chop the shrimp into bite-sized thirds.
  2. In a large mixing bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, and the remaining 1/2 tbsp (4g) of Old Bay until the mixture is smooth.
  3. Add the chopped shrimp, diced celery, sliced scallions, and fresh dill to the bowl. Gently fold the ingredients together using a rubber spatula until the shrimp are evenly coated in the dressing.
  4. Season with black pepper to taste and serve.
