Ingredients:

  • 1 pound (450 g) firm white fish fillets (such as cod or haddock)
  • 1 teaspoon (5 g) salt
  • 1 teaspoon (5 g) black pepper
  • Juice of 1 lemon (about 2 tablespoons or 30 ml)
  • 1 cup (120 g) all-purpose flour
  • 2 large eggs
  • 1 cup (100 g) panko breadcrumbs
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) dried dill (or 1 tablespoon fresh)
  • Vegetable oil (for frying)

Instructions:

  1. Rinse the fish fillets and pat them dry with paper towels. Season the fish with salt, pepper, and lemon juice.
  2. In one bowl, place flour. In a second bowl, whisk the eggs. In a third bowl, mix panko breadcrumbs, garlic powder, and dill.
  3. Dredge each fish fillet in flour, shaking off excess. Dip into the egg mixture, then coat with panko breading. Ensure an even layer.
  4. In a frying pan, heat about 1 inch of vegetable oil over medium-high heat.
  5. Carefully add fish pieces to the hot oil in batches. Fry until golden brown and cooked through, about 3-4 minutes per side.
  6. Remove the fish bites using tongs or a slotted spoon and place them on paper towels to drain excess oil.
