Ingredients:
- 1 pound (450 g) firm white fish fillets (such as cod or haddock)
- 1 teaspoon (5 g) salt
- 1 teaspoon (5 g) black pepper
- Juice of 1 lemon (about 2 tablespoons or 30 ml)
- 1 cup (120 g) all-purpose flour
- 2 large eggs
- 1 cup (100 g) panko breadcrumbs
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) dried dill (or 1 tablespoon fresh)
- Vegetable oil (for frying)
Instructions:
- Rinse the fish fillets and pat them dry with paper towels. Season the fish with salt, pepper, and lemon juice.
- In one bowl, place flour. In a second bowl, whisk the eggs. In a third bowl, mix panko breadcrumbs, garlic powder, and dill.
- Dredge each fish fillet in flour, shaking off excess. Dip into the egg mixture, then coat with panko breading. Ensure an even layer.
- In a frying pan, heat about 1 inch of vegetable oil over medium-high heat.
- Carefully add fish pieces to the hot oil in batches. Fry until golden brown and cooked through, about 3-4 minutes per side.
- Remove the fish bites using tongs or a slotted spoon and place them on paper towels to drain excess oil.
