Ingredients:
- 1/4 cup (60 ml) fish sauce
- 1/4 cup (60 ml) fresh lime juice
- 2 tablespoons (30 ml) granulated sugar
- 1-2 cloves garlic, minced (about 1 tablespoon)
- 1-2 Thai chilies, finely minced (adjust to taste)
- 2 tablespoons (30ml) water (optional)
- 1 tablespoon (15ml) grated carrot (optional)
Instructions:
- In a mixing bowl, combine fish sauce, lime juice, sugar, minced garlic, and minced Thai chilies.
- Whisk well until the sugar is completely dissolved.
- Taste the sauce and adjust the ingredients as needed. Add more lime juice for acidity, sugar for sweetness, fish sauce for saltiness, or chilies for heat.
- If the sauce is too strong, add water, one tablespoon at a time, until it reaches your desired strength.
- Stir in grated carrot, if using, for a pop of color and subtle sweetness.
- Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
