Ingredients:

  • 1/4 cup (60 ml) fish sauce
  • 1/4 cup (60 ml) fresh lime juice
  • 2 tablespoons (30 ml) granulated sugar
  • 1-2 cloves garlic, minced (about 1 tablespoon)
  • 1-2 Thai chilies, finely minced (adjust to taste)
  • 2 tablespoons (30ml) water (optional)
  • 1 tablespoon (15ml) grated carrot (optional)

Instructions:

  1. In a mixing bowl, combine fish sauce, lime juice, sugar, minced garlic, and minced Thai chilies.
  2. Whisk well until the sugar is completely dissolved.
  3. Taste the sauce and adjust the ingredients as needed. Add more lime juice for acidity, sugar for sweetness, fish sauce for saltiness, or chilies for heat.
  4. If the sauce is too strong, add water, one tablespoon at a time, until it reaches your desired strength.
  5. Stir in grated carrot, if using, for a pop of color and subtle sweetness.
  6. Serve immediately or store in an airtight container in the refrigerator for up to 1 week.
