Ingredients:
- 1.5 lb haddock fillets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
- 4 tbsp unsalted butter
- 1/2 cup panko breadcrumbs
- 1 tbsp fresh parsley, finely chopped
- 1 tsp lemon zest
- 1/4 tsp garlic powder
Instructions:
- Preheat your oven to 450°F (230°C). Place the 4 tbsp unsalted butter in your 9x13 inch baking dish and bake for 2-3 minutes until it's melted and bubbling. Note: This pre heats the pan so the fish starts searing immediately.
- Pat the 1.5 lb haddock fillets completely dry with paper towels. Season both sides with 1/2 tsp salt and 1/4 tsp black pepper, then drizzle with 1 tbsp lemon juice.
- Remove the dish from the oven. Carefully place the seasoned fillets into the melted butter, turning each piece until it's fully coated in the liquid gold.
- In a small bowl, mix 1/2 cup panko, 1 tbsp chopped parsley, 1 tsp lemon zest, and 1/4 tsp garlic powder.
- Press a generous layer of the panko mixture onto the top of each fillet. Note: Press firmly so it doesn't slide off during baking.
- Bake for 12-15 minutes until the topping is mahogany colored and the fish is opaque.
- Check the fish by gently pushing the center with a fork; it should flake easily.
- For a truly shattering crust, broil for the final 60 seconds until the edges are deeply browned.
