Ingredients:

  • 4 large egg whites (around 120g)
  • 1 cup granulated sugar (200g)
  • 1/2 teaspoon cream of tartar (2g)
  • 1 teaspoon vanilla extract (5ml)
  • 1/4 teaspoon sea salt (1g)
  • Edible sea salt flakes (optional, for topping)
  • Fresh berries (like raspberries or blueberries) for serving

Instructions:

  1. Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
  2. In a clean, dry mixing bowl, add the egg whites. Beat on medium speed until foamy.
  3. Gradually add the cream of tartar and continue to beat until soft peaks form.
  4. With the mixer running, gradually add sugar, about 1 tablespoon at a time.
  5. Increase the speed to high and beat until stiff, glossy peaks form. This may take about 5 minutes.
  6. Gently fold in the vanilla extract and sea salt using a rubber spatula.
  7. Using a large spoon or piping bag, dollop or pipe mounds of meringue onto the prepared baking sheet.
  8. Place in the preheated oven and bake for 1 hour, or until the meringues are dry and easily lift off the parchment.
  9. Turn off the oven and leave them inside to cool completely.
  10. Once cool, garnish with sea salt flakes and serve with fresh berries.
