Ingredients:
- 4 large egg whites (around 120g)
- 1 cup granulated sugar (200g)
- 1/2 teaspoon cream of tartar (2g)
- 1 teaspoon vanilla extract (5ml)
- 1/4 teaspoon sea salt (1g)
- Edible sea salt flakes (optional, for topping)
- Fresh berries (like raspberries or blueberries) for serving
Instructions:
- Preheat the oven to 200°F (93°C) and line a baking sheet with parchment paper.
- In a clean, dry mixing bowl, add the egg whites. Beat on medium speed until foamy.
- Gradually add the cream of tartar and continue to beat until soft peaks form.
- With the mixer running, gradually add sugar, about 1 tablespoon at a time.
- Increase the speed to high and beat until stiff, glossy peaks form. This may take about 5 minutes.
- Gently fold in the vanilla extract and sea salt using a rubber spatula.
- Using a large spoon or piping bag, dollop or pipe mounds of meringue onto the prepared baking sheet.
- Place in the preheated oven and bake for 1 hour, or until the meringues are dry and easily lift off the parchment.
- Turn off the oven and leave them inside to cool completely.
- Once cool, garnish with sea salt flakes and serve with fresh berries.
