Ingredients:

  • 4 (6 oz / 170 g) lampuka fish fillets (fresh or thawed)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • Juice of 1 lemon
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ red onion, finely chopped
  • 1 tablespoon capers, rinsed and chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh basil, chopped
  • Juice of 1 orange
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix olive oil, sea salt, black pepper, paprika, and lemon juice. Coat the lampuka fillets in the marinade. Allow to marinate for 15 minutes.
  2. In a separate bowl, combine cherry tomatoes, cucumber, red onion, capers, parsley, and basil. Add orange juice, lemon zest, and season with salt and pepper. Stir gently to combine and set aside.
  3. Preheat the grill to medium-high heat.
  4. Place marinated lampuka fillets on the grill. Cook for 5-6 minutes on each side or until the fish flakes easily with a fork and has grill marks.
  5. Plate the grilled lampuka fish and top with citrus herb salsa.
