Ingredients:
- 4 (6 oz / 170 g) lampuka fish fillets (fresh or thawed)
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- Juice of 1 lemon
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- ½ red onion, finely chopped
- 1 tablespoon capers, rinsed and chopped
- ¼ cup fresh parsley, chopped
- ¼ cup fresh basil, chopped
- Juice of 1 orange
- Zest of 1 lemon
- Salt and pepper to taste
Instructions:
- In a bowl, mix olive oil, sea salt, black pepper, paprika, and lemon juice. Coat the lampuka fillets in the marinade. Allow to marinate for 15 minutes.
- In a separate bowl, combine cherry tomatoes, cucumber, red onion, capers, parsley, and basil. Add orange juice, lemon zest, and season with salt and pepper. Stir gently to combine and set aside.
- Preheat the grill to medium-high heat.
- Place marinated lampuka fillets on the grill. Cook for 5-6 minutes on each side or until the fish flakes easily with a fork and has grill marks.
- Plate the grilled lampuka fish and top with citrus herb salsa.
