Ingredients:

  • 400 grams beef, cut into cubes (such as chuck or brisket)
  • 1 ½ tablespoons Massaman curry paste
  • 2 cups coconut milk
  • 1 tablespoon vegetable oil
  • ½ cup roasted peanuts
  • 4 medium potatoes, cut into cubes
  • 2 teaspoons brown sugar
  • 1 teaspoon fish sauce
  • 1 teaspoon beef stock powder

Instructions:

  1. In a large sauté pan, heat the vegetable oil over medium heat.
  2. Add the Massaman curry paste and fry for 1 minute; then add ½ cup of coconut milk and cook until golden brown.
  3. Stir in the cubed beef until well-coated with the curry paste.
  4. Pour in 1 cup of coconut milk, cover, and let it simmer for 10 minutes.
  5. Uncover, transfer to a medium pot, and add the remaining coconut milk and roasted peanuts. Cover and boil on medium heat for 5 minutes.
  6. Add the cubed potatoes, cover, and cook for another 5 minutes.
  7. Stir in brown sugar, fish sauce, and beef stock powder. Cover and cook for an additional 10 minutes, or until the potatoes are tender.
