Ingredients:
- 400 grams beef, cut into cubes (such as chuck or brisket)
- 1 ½ tablespoons Massaman curry paste
- 2 cups coconut milk
- 1 tablespoon vegetable oil
- ½ cup roasted peanuts
- 4 medium potatoes, cut into cubes
- 2 teaspoons brown sugar
- 1 teaspoon fish sauce
- 1 teaspoon beef stock powder
Instructions:
- In a large sauté pan, heat the vegetable oil over medium heat.
- Add the Massaman curry paste and fry for 1 minute; then add ½ cup of coconut milk and cook until golden brown.
- Stir in the cubed beef until well-coated with the curry paste.
- Pour in 1 cup of coconut milk, cover, and let it simmer for 10 minutes.
- Uncover, transfer to a medium pot, and add the remaining coconut milk and roasted peanuts. Cover and boil on medium heat for 5 minutes.
- Add the cubed potatoes, cover, and cook for another 5 minutes.
- Stir in brown sugar, fish sauce, and beef stock powder. Cover and cook for an additional 10 minutes, or until the potatoes are tender.
