Ingredients:

  • 4 (6 oz / 170g) salmon fillets, skin-on or skinless
  • 1/4 cup (60ml) pure maple syrup
  • 2 tbsp (25g) light brown sugar, packed
  • 1 tbsp (15ml) soy sauce
  • 1 tbsp (15ml) fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Set the oven to 400°F (200°C). Line your baking sheet with parchment paper.
  2. Pat the salmon fillets completely dry with a paper towel. Note: Surface moisture prevents the glaze from sticking.
  3. Whisk together the maple syrup, brown sugar, soy sauce, lemon juice, minced garlic, and pepper in a small bowl.
  4. Stir the mixture until the sugar crystals mostly disappear.
  5. Place fillets on the sheet and brush the glaze over the tops and sides.
  6. Bake for 10–12 minutes until the fish is opaque but still slightly translucent in the center.
  7. Switch the oven to 'Broil'.
  8. Cook for another 2–3 minutes until the glaze bubbles and turns deep brown.
  9. Remove from heat when the salmon flakes easily with a fork.
