Ingredients:
- 1 pound (450g) medium shrimp, peeled, deveined, and tails removed
- ¾ cup (180ml) fresh lime juice (from about 6-8 limes)
- 1 ripe mango, peeled and diced (about 1 ½ cups)
- ½ red onion, finely diced (about ½ cup)
- 1 jalapeno pepper, seeded and finely minced (optional, adjust to taste)
- ½ cup (1 bunch) fresh cilantro, roughly chopped
- 1 tablespoon extra virgin olive oil
- Salt and freshly ground black pepper to taste
- ½ avocado, diced for serving (optional)
Instructions:
- Rinse the shrimp and pat them dry. Cut the shrimp into 1/2-inch pieces.
- In a glass or stainless steel bowl, combine the shrimp and lime juice. Ensure the shrimp are fully submerged. Cover and refrigerate for 1-2 hours, or until the shrimp are opaque and firm.
- While the shrimp marinates, dice the mango, red onion, jalapeño (if using), and chop the cilantro.
- Once the shrimp is 'cooked', drain the lime juice. Add the mango, red onion, jalapeño, cilantro, and olive oil to the shrimp.
- Season with salt and pepper to taste. Gently toss to combine. Taste and adjust seasoning as needed – more lime juice for extra zing, more chili for heat, etc.
- Refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled, garnished with diced avocado (if desired).
