Ingredients:
- 2 (5 oz / 142 g) cans tuna in water, drained thoroughly
- 1 large egg
- 1/4 cup (30 g) almond flour
- 2 tbsp (10 g) grated Parmesan cheese
- 1 tbsp (15 g) mayonnaise
- 1 tbsp (5 g) fresh parsley, minced
- 1/2 tsp (2.5 g) garlic powder
- 1/4 tsp (1.5 g) salt
- 1/4 tsp (1.25 g) black pepper
- 1 tsp (5 ml) lemon juice
Instructions:
- Drain the tuna cans aggressively by pressing the lid down to remove all excess liquid. In a medium bowl, flake the tuna with a fork.
- Stir in the egg, almond flour, parmesan, mayonnaise, parsley, garlic powder, salt, pepper, and lemon juice until the mixture is cohesive and holds its shape.
- Divide the mixture into 4 equal portions and shape them into patties approximately 1 inch thick.
- Lightly spray the air fryer basket or parchment paper with oil. Place the patties in a single layer, ensuring they do not touch.
- Cook at 400°F (200°C) for 5 minutes, carefully flip the cakes using a spatula, and cook for another 5 minutes until the exterior is mahogany-colored and firm.
