Ingredients:
- 4 (6 oz / 170g) lobster tails, shelled and deveined
- 2 tbsp (28g) unsalted butter
- 1 tbsp (15ml) lemon juice
- ½ tsp (3g) kosher salt
- 1 lb (450g) cremini mushrooms, finely minced
- 2 tbsp (28g) unsalted butter
- 2 shallots (60g), finely diced
- 3 cloves (9g) garlic, minced
- 1 tbsp (4g) fresh thyme leaves
- ½ cup (65g) all-purpose flour
- 2 large eggs
- 1 cup (240ml) whole milk
- 2 tbsp (28g) melted butter
- ¼ tsp (1.5g) salt
- 1 sheet (approx. 14 oz / 400g) frozen puff pastry, thawed
- 2 large eggs, beaten
- 1 tbsp (15ml) water
Instructions:
- Pulse mushrooms in a food processor until finely minced (but not a paste).
- Melt butter in a large skillet over medium-high heat. Add shallots and garlic, sautéing until translucent.
- Stir in mushrooms and thyme. Cook, stirring frequently, until all moisture has evaporated and the mixture is a dark, thick paste. Set aside to cool completely.
- Whisk flour, eggs, milk, melted butter, and salt. Pour thin layers into a hot skillet to make 4 small, thin crepes. Set aside.
- Season lobster tails with salt and lemon. In the same skillet, sear lobster in butter for only 2 minutes per side until undercooked in the center. Remove and let cool.
- Place a crepe on a work surface, spread a layer of cooled mushroom duxelles, and place a lobster tail in the center.
- Fold the crepe around the lobster to form a tight parcel, then wrap the parcel in a portion of puff pastry.
- Brush the pastry with the beaten egg wash mixture and chill in the refrigerator for 30 minutes to set the shape.
- Bake in a preheated oven at 400°F (200°C) for 20-25 minutes until the crust is mahogany-colored and shatters upon impact.
