Ingredients:
- 2 (1.5 lb / 680g) whole lobsters, split lengthwise
- 2 tbsp (28g) unsalted butter, melted
- ½ tsp (3g) salt
- ¼ tsp (1g) white pepper
- 3 tbsp (42g) unsalted butter
- 1 medium (30g) shallot, finely minced
- 8 oz (225g) cremini mushrooms, finely chopped
- 1 tbsp (15g) all-purpose flour
- ¼ cup (60ml) dry sherry or cognac
- 1 cup (240ml) heavy cream
- ½ cup (120ml) fish stock
- 1 tsp (5g) fresh tarragon, chopped
- ½ cup (50g) Gruyère cheese, grated
Instructions:
- Steam or boil the lobsters until just opaque. Remove the meat from the shells and chop into bite-sized chunks, keeping the shells intact for presentation.
- Toss the lobster meat with melted butter, salt, and white pepper.
- Place the empty lobster halves on a baking sheet and lightly brush the interiors with butter.
- Melt butter in a skillet over medium heat. Add shallots and mushrooms, cooking until the mushrooms are browned and the shallots are translucent.
- Stir in the flour and cook for 1 minute to remove the raw flour taste.
- Pour in the sherry or cognac, scraping the bottom of the pan until the liquid is reduced by half.
- Gradually whisk in fish stock and heavy cream. Simmer on low for 5–7 minutes until the sauce coats the back of a spoon.
- Fold in the chopped tarragon and half of the grated Gruyère until melted and smooth.
- Fold the chopped lobster meat into the sauce until evenly coated.
- Spoon the mixture generously into the reserved lobster shells.
- Sprinkle the remaining Gruyère cheese over the top of each shell.
- Place under the broiler for 3–5 minutes until the cheese is bubbling and has developed a mahogany-colored crust.
