  • 2 tablespoons olive oil (30 ml)
  • 2 tablespoons lemon juice, freshly squeezed (30 ml)
  • 1 tablespoon finely chopped fresh parsley (15 ml)
  • 1 tablespoon finely chopped fresh dill (15 ml)
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (6-ounce) fish fillets (about 170g each), such as cod, mahi-mahi, or snapper, skin on or off
  • Lemon wedges, for serving (optional)

Instructions:

  1. In a small bowl, whisk together the olive oil, lemon juice, parsley, dill, minced garlic, salt, and pepper.
  2. Place the fish fillets in a shallow dish and pour the marinade over them, ensuring they are coated evenly. Let them marinate for at least 10 minutes at room temperature (or up to 30 minutes in the refrigerator – but bring to room temperature before grilling).
  3. Preheat your grill to medium-high heat (about 375-450°F or 190-230°C). Clean the grill grates with a grill brush.
  4. Place the fish fillets on the preheated grill, skin-side down (if using skin-on fillets).
  5. Cook for 4-6 minutes per side, or until the fish is opaque and flakes easily with a fork. Use tongs to carefully flip the fish. Check for an internal temperature of 145°F (63°C) with an instant-read thermometer if desired.
