Ingredients:
- 4 large (6oz/170g each) fish fillets (Cod, Haddock, or Tilapia)
- 1 tbsp extra virgin olive oil
- 0.5 tsp fine sea salt
- 1.5 tbsp coarsely cracked black peppercorns
- 2 tbsp fresh lemon zest
- 1 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp dried parsley or thyme
- 1 fresh lemon, sliced into rounds
- 2 tbsp cold unsalted butter, cubed
- 1 tbsp fresh parsley, chopped for garnish
Instructions:
- Pat the fish fillets extremely dry with paper towels to ensure the seasoning adheres and to prevent steaming.
- Oil the base. Rub 1 tbsp extra virgin olive oil over both sides of the fillets and place them on a parchment lined tray.
- Season the fillets. Sprinkle 0.5 tsp fine sea salt evenly over the fish.
- Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
- In a small bowl, combine the cracked black peppercorns, fresh lemon zest, garlic powder, onion powder, and dried herbs to create the zesty rub.
- Brush the top of each fillet with olive oil, then press the lemon-pepper rub firmly onto the surface of the fish.
- Place the fillets on the prepared baking sheet. Top each fillet with a thin lemon slice and a small cube of cold butter.
- Bake for 12 minutes or until the internal temperature reaches 145°F and the fish flakes easily with a fork.
- Garnish with freshly chopped parsley and serve immediately.
- Rest and serve. Let the fish sit for 3 minutes until the juices settle and the butter creates a glossy glaze.
