Ingredients:

  • 4 large (6oz/170g each) fish fillets (Cod, Haddock, or Tilapia)
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp fine sea salt
  • 1.5 tbsp coarsely cracked black peppercorns
  • 2 tbsp fresh lemon zest
  • 1 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp dried parsley or thyme
  • 1 fresh lemon, sliced into rounds
  • 2 tbsp cold unsalted butter, cubed
  • 1 tbsp fresh parsley, chopped for garnish

Instructions:

  1. Pat the fish fillets extremely dry with paper towels to ensure the seasoning adheres and to prevent steaming.
  2. Oil the base. Rub 1 tbsp extra virgin olive oil over both sides of the fillets and place them on a parchment lined tray.
  3. Season the fillets. Sprinkle 0.5 tsp fine sea salt evenly over the fish.
  4. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with parchment paper.
  5. In a small bowl, combine the cracked black peppercorns, fresh lemon zest, garlic powder, onion powder, and dried herbs to create the zesty rub.
  6. Brush the top of each fillet with olive oil, then press the lemon-pepper rub firmly onto the surface of the fish.
  7. Place the fillets on the prepared baking sheet. Top each fillet with a thin lemon slice and a small cube of cold butter.
  8. Bake for 12 minutes or until the internal temperature reaches 145°F and the fish flakes easily with a fork.
  9. Garnish with freshly chopped parsley and serve immediately.
  10. Rest and serve. Let the fish sit for 3 minutes until the juices settle and the butter creates a glossy glaze.
