Ingredients:
- 4 whole trout, cleaned and scaled (approx. 1 pound each, or 450g)
- 2 lemons (1 sliced into rounds, 1 for juice)
- 4 tablespoons olive oil (60ml)
- 4 cloves garlic, minced
- Fresh herbs (e.g., parsley, dill, or thyme), chopped (about 1 cup, or 15g)
- Salt and freshly ground black pepper, to taste
- Extra lemon wedges for serving (optional)
- Fresh herb sprigs for presentation (optional)
Instructions:
- Preheat oven to 400°F (200°C).
- Rinse and pat dry the trout. Make a couple of shallow slashes on each side using a sharp knife.
- In a mixing bowl, combine olive oil, minced garlic, chopped herbs, lemon juice, salt, and pepper. Rub the mixture inside and over the fish.
- Line a baking tray with parchment paper or aluminum foil. Place trout on the tray and top with lemon slices.
- Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and has reached an internal temperature of 145°F (63°C).
- Carefully transfer to serving plates, garnish with fresh herbs and lemon wedges.
