Ingredients:

  • 4 whole trout, cleaned and scaled (approx. 1 pound each, or 450g)
  • 2 lemons (1 sliced into rounds, 1 for juice)
  • 4 tablespoons olive oil (60ml)
  • 4 cloves garlic, minced
  • Fresh herbs (e.g., parsley, dill, or thyme), chopped (about 1 cup, or 15g)
  • Salt and freshly ground black pepper, to taste
  • Extra lemon wedges for serving (optional)
  • Fresh herb sprigs for presentation (optional)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Rinse and pat dry the trout. Make a couple of shallow slashes on each side using a sharp knife.
  3. In a mixing bowl, combine olive oil, minced garlic, chopped herbs, lemon juice, salt, and pepper. Rub the mixture inside and over the fish.
  4. Line a baking tray with parchment paper or aluminum foil. Place trout on the tray and top with lemon slices.
  5. Bake in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and has reached an internal temperature of 145°F (63°C).
  6. Carefully transfer to serving plates, garnish with fresh herbs and lemon wedges.
