  • 2 tablespoons lemon-flavored olive oil (30 ml)
  • 1 teaspoon Italian seasoning (5 ml)
  • 1/4 cup fresh sprouts (alfalfa, radish, or your favorite) (approx. 10g)
  • Pinch of flaky sea salt (optional)
  • Freshly cracked black pepper (optional)

Instructions:

  1. Lay the flounder fillet on a clean cutting board. Using a very sharp knife, slice the fillet thinly, almost translucent.
  2. Arrange the flounder slices artfully on a serving plate or two individual plates. Aim for a slightly overlapping presentation.
  3. Drizzle the lemon-flavored olive oil evenly over the sliced flounder.
  4. Sprinkle the Italian seasoning over the carpaccio. Season lightly with flaky sea salt and freshly cracked black pepper, if desired.
  5. Scatter the fresh sprouts over the carpaccio for added texture and visual appeal.
