Ingredients:

  • 4 (6-ounce/170g) tilapia fillets, skin on or off
  • 2 tablespoons/30ml olive oil
  • 2 tablespoons/30ml lemon juice, freshly squeezed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 lemon, sliced into thin rounds (for garnish)
  • Optional: Pinch of red pepper flakes for a little kick

Instructions:

  1. Preheat oven to 400°F/200°C.
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, parsley, thyme, oregano, salt, and pepper.
  3. Place tilapia fillets in the baking dish. Pour the marinade over the fillets, ensuring they are evenly coated.
  4. Place lemon slices on top of the tilapia fillets.
  5. Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Garnish with fresh herbs (if desired) and serve immediately.
