Ingredients:
- 4 (6-ounce/170g) tilapia fillets, skin on or off
- 2 tablespoons/30ml olive oil
- 2 tablespoons/30ml lemon juice, freshly squeezed
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 lemon, sliced into thin rounds (for garnish)
- Optional: Pinch of red pepper flakes for a little kick
Instructions:
- Preheat oven to 400°F/200°C.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, parsley, thyme, oregano, salt, and pepper.
- Place tilapia fillets in the baking dish. Pour the marinade over the fillets, ensuring they are evenly coated.
- Place lemon slices on top of the tilapia fillets.
- Bake in the preheated oven for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh herbs (if desired) and serve immediately.
