Ingredients:

  • 4 (6-ounce) orange roughy fillets (about 170g each)
  • 2 tablespoons olive oil (30ml)
  • Juice of 1 lemon (about 2 tablespoons, 30ml)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (5g)
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs (60g)
  • ¼ cup grated Parmesan cheese (25g)
  • 2 tablespoons unsalted butter, melted (30g)
  • 1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Place orange roughy fillets in a baking dish and pour the marinade over them. Let marinate for about 10 minutes.
  4. In a separate bowl, combine panko breadcrumbs, grated Parmesan, and melted butter.
  5. After marinating, spoon the breadcrumb mixture evenly over each fillet.
  6. Bake in the preheated oven for 15-20 minutes, or until the fish is flaky and breadcrumbs are golden brown.
  7. Garnish with fresh parsley before serving.
