Ingredients:
- 4 (6-ounce) orange roughy fillets (about 170g each)
- 2 tablespoons olive oil (30ml)
- Juice of 1 lemon (about 2 tablespoons, 30ml)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano (5g)
- Salt and pepper to taste
- ½ cup panko breadcrumbs (60g)
- ¼ cup grated Parmesan cheese (25g)
- 2 tablespoons unsalted butter, melted (30g)
- 1 tablespoon fresh parsley, chopped (optional for garnish)
Instructions:
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
- Place orange roughy fillets in a baking dish and pour the marinade over them. Let marinate for about 10 minutes.
- In a separate bowl, combine panko breadcrumbs, grated Parmesan, and melted butter.
- After marinating, spoon the breadcrumb mixture evenly over each fillet.
- Bake in the preheated oven for 15-20 minutes, or until the fish is flaky and breadcrumbs are golden brown.
- Garnish with fresh parsley before serving.
