Ingredients:

  • 4 (6-ounce/170g) cod fillets, skin off
  • 1 tablespoon/15 ml olive oil
  • 1 lemon, zested and juiced (about 2 tablespoons/30 ml juice)
  • 1 clove garlic, minced
  • 1/4 cup/15g chopped fresh parsley
  • 1/4 cup/15g chopped fresh dill
  • 1/4 teaspoon/1.5g salt
  • 1/4 teaspoon/1.5g black pepper
  • 1/2 cup/50g panko breadcrumbs
  • 2 tablespoons/30g unsalted butter, melted
  • 1 tablespoon/15g grated Parmesan cheese
  • 1/4 teaspoon/1.5g garlic powder

Instructions:

  1. Pat the cod fillets dry with paper towels. Place them in the baking dish.
  2. In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, parsley, dill, salt, and pepper.
  3. Pour the marinade over the cod fillets, ensuring they are evenly coated.
  4. In another small bowl, combine the panko breadcrumbs, melted butter, Parmesan cheese, and garlic powder. Mix well.
  5. Sprinkle the breadcrumb mixture evenly over the cod fillets.
  6. Bake in a preheated oven at 400°F/200°C for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the breadcrumbs are golden brown. Check for an internal temperature of 145°F/63°C using a food thermometer.
  7. Garnish with extra parsley and a lemon wedge, if desired.
