Ingredients:
- 4 (6-ounce/170g) cod fillets, skin off
- 1 tablespoon/15 ml olive oil
- 1 lemon, zested and juiced (about 2 tablespoons/30 ml juice)
- 1 clove garlic, minced
- 1/4 cup/15g chopped fresh parsley
- 1/4 cup/15g chopped fresh dill
- 1/4 teaspoon/1.5g salt
- 1/4 teaspoon/1.5g black pepper
- 1/2 cup/50g panko breadcrumbs
- 2 tablespoons/30g unsalted butter, melted
- 1 tablespoon/15g grated Parmesan cheese
- 1/4 teaspoon/1.5g garlic powder
Instructions:
- Pat the cod fillets dry with paper towels. Place them in the baking dish.
- In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, parsley, dill, salt, and pepper.
- Pour the marinade over the cod fillets, ensuring they are evenly coated.
- In another small bowl, combine the panko breadcrumbs, melted butter, Parmesan cheese, and garlic powder. Mix well.
- Sprinkle the breadcrumb mixture evenly over the cod fillets.
- Bake in a preheated oven at 400°F/200°C for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork, and the breadcrumbs are golden brown. Check for an internal temperature of 145°F/63°C using a food thermometer.
- Garnish with extra parsley and a lemon wedge, if desired.
