Ingredients:

  • 2 (6-ounce/170g) cod fillets, skin on or off
  • 1 pound (450g) asparagus, trimmed
  • 2 tablespoons olive oil
  • 1 lemon, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper (if using).
  3. Toss the asparagus with 1 tablespoon of olive oil, salt, and pepper in a small bowl.
  4. Spread the asparagus in a single layer on the baking sheet.
  5. Pat the cod fillets dry with paper towels. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper.
  6. Place the cod fillets on top of the asparagus.
  7. Arrange lemon slices over the cod. Sprinkle with minced garlic, chopped parsley, and chopped dill.
  8. Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. The asparagus should be tender-crisp.
  9. Serve immediately.
