Ingredients:
- 2 (6-ounce/170g) cod fillets, skin on or off
- 1 pound (450g) asparagus, trimmed
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh dill, chopped
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper (if using).
- Toss the asparagus with 1 tablespoon of olive oil, salt, and pepper in a small bowl.
- Spread the asparagus in a single layer on the baking sheet.
- Pat the cod fillets dry with paper towels. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper.
- Place the cod fillets on top of the asparagus.
- Arrange lemon slices over the cod. Sprinkle with minced garlic, chopped parsley, and chopped dill.
- Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork. The asparagus should be tender-crisp.
- Serve immediately.
